Celebrating



Last weekend was my girlfriend's bday party and she received some friends at her house with couple fancy drinks and food…I went down to the supermarket to buy some things…I wanted to create something new, personally I don't like to follow recipes (even when I do, I always change a little to give my personal character to it), therefore I randomly took some ingredients that I thought could work well together and I started think in some possible combinations following my taste...


The result is this picture above…good looking and surprisingly tasty …as people got interested on what is that, I'll put this recipe to all of you… but don't forget ... try to inovate to bring your personality on it...and of course tell me after ;)

You'll need:

Cherry Tomatoes
Some kind of processed cheese (not too strong cuz the Sheep cheese is the main player here)
Feta Cheese
Extra Virgin Olive Oil
Garlic
Red Onions
Mint
Salt and Pepper

I'm not sure the correct amount of each ingredient, however I used more or less 40 Cherry Tomatoes…cut carefully each one's top and took seeds and pulp off…keep all tops to "close" them afterwards…

Chop in small slices, 4 toes of garlic and quickly fry them, with Olive Oil until they get that nice golden tone…after it, chop very well in small cubes red onion (let's say, if you have an onion as big as a tennis ball, take 1/3 of it, we don't need too much unless you want it ;)), then put all in a bowl, one box of this processed cheese, one piece of Feta cheese (normally it already comes packed…I guess 200 or 250g), chopped onions, golden garlic, Mint as well chopped in small pieces (here the Mint brings freshness to the mix, therefore don't be economic with it…I used quite a lot cuz I, as well, wanted to feel its taste, so play around a bit until you get there), Extra Virgin Olive Oil, salt and pepper…Mix everything with your cleaned hand (or not if you want bring an extra flavor to it)…check the salt…

I used as well, a pinch of ginger (powder) that I found here in a supermarket nearby…it brought the taste to another direction….very interesting…

Even if you want to try out a little bit more, I'd suggest to use some cloves (tops 4), which will give an exotic flavor to it…If you want to go crazy, you can add a pinch of coffee powder as well….but leave the clove off in this case…

When you find your desired taste, fill the tomatoes using a small coffee spoon and gently close them with the top…
